Matcha Crème Brûlée

Ingredients:

  • 2 tsp matcha powder
  • 2 cups heavy cream
  • 5 egg yolks
  • ½ cup sugar (plus extra for topping)
  • 1 tsp vanilla extract

Steps:

  1. Preheat oven to 150°C (300°F).
  2. Heat cream and matcha in a saucepan until warm. Do not boil.
  3. Whisk egg yolks and sugar, then slowly add the matcha cream while whisking.
  4. Strain mixture and pour into ramekins.
  5. Place ramekins in a water bath and bake for 30–40 minutes until set.
  6. Cool, then sprinkle sugar on top and caramelize with a kitchen torch
